LEXINGTON — The neon “open” sign in the window of Teresa’s Tortilla Bakery isn’t a fluke. The popular store is back in business after sitting silent since early 2016.
“To me, it’s fate,” said Teresa Marquez, who just purchased the business. It already has her name because she is the one who founded it in the first place.
Marquez said she and her husband Santos established Teresa’s Tortillas in 1993 because they knew people in the area wanted fresh baked tortillas. They made and sold tortillas at 507 N. Lincoln.
Marquez said they sold the business 16 years ago because she was pregnant, plus had three other children who had grown up in the bakery. “I wanted to have time with my daughter,” she said.
